THE most satisfying Breakfast Dish!
This Egg Casserole dish hits all the flavor notes! Bursting with Southwest flavors and just the right amount of cheesy veggie goodness, you will find this on your menu A LOT! Perfect for a Keto, low carb or Weight Watchers (WW) lifestyle! The WW points are very, very low and the carbs are too! If you want to raise the fat, use whole milk yogurt and full fat cheese on top! I like to serve it with a little greek non fat yogurt but you can also serve it with some sour cream as well.
Every time I make this for a brunch get together my family raves about it! It seems to have a little something in that everyone can enjoy!
How can I change it up for variations?
Ahhhh, great question! Sometimes I will make 2 of these delicious Casseroles when I’m having a lot of “carnivores” over! Here are some things you can change up to make it feel like you have 2 gourmet dishes on the menu!
#1 Add in some sausage! Brown it up and throw it in instead of Asparagus
#2 Add is some Chorizo for a real authentic Mexican flavor. BE sure to brown this up first as well!
#3 Ham and Pineapple is a wonderful addition to this dish!
I always like to top this with a cold creamy condiment and also a little Ortega sauce. Its also delicious with some taco seasoning blended with Greek yogurt or sour cream as well. You can mix up several different condiments with different flavor profiles to impress your guests — or yourself for that matter!

Southwest Egg Casserole
Ingredients
- 5 eggs Beaten
- 1 C Egg whites
- 1 tbsp garlic powder
- 1 tbsp chili powder
- 1 tbsp Smoked Paprika
- 1/2 C Non Fat Greek Yogurt You can also use full fat
- 1 C Chopped Asparagus
- ½ C Chopped Red Onion
- Dash Red pepper flakes
- ¼ tsp Each of salt and pepper
Instructions
- Chop Asparagus -- I used 1 cup of thin Asparagus -- and Red onion. Beat 5 eggs and 1 C egg whites with all other ingredients in a bowl. Grease a 8X8 Casserole dish. Preheat oven to 400 degree F. Pour ingredients in Casserole Dish and back covered for 35-40 minutes. Remove foil and add cheese for the last few minutes. Let rest 10-15 minutes and serve!
