This amazing Peach Pancake bread is one of my favorite original WW recipes! Slightly sweet like a pancake but more the consistency of a bread, this WW recipe is amazingly versatile and delicious.
I have this for breakfast with some hot coffee or as a snack in the afternoon. The “secret” to achieving this texture is adding Self rising flour to the pancake batter. It gives the otherwise sponge-like pancake texture a more cake like bite. I also love that I’m not using bananas because, lets face it, bananas work in a lot of WW “dupes” but sometimes the flavor tend to take over the show!
With this recipe the peach is forward along with the bright citrus flavor of the Orange extract. It really helps me look forward to summer when I eat this! PLUS I dont worry about shorts season either! with this WW recipe you can have your cake and eat it too!
Feel free to plug in some of your favorite ingredients to change the flavor of this Pancake Bread. Strawberry with vanilla extract, Pecans with Maple Extract, Banana Slices with almond extract — so much creativity, so little time!
Peach Pancake Bread
Ingredients
- 1 C Birch Benders Paleo Pancake & waffle mix
This is in my storefront - 1/2 C Self-rising Flour
- 1 whole Egg
- 4 tsp Swerve Confectioners Sugar replacement This is in my storefront
- 1 tsp Orange Extract
- 1 tsp Cake Batter Extract This is in my storefront
- ¾ C Unsweetened Almond Milk
- 1 C Frozen unsweetened Peaches
Instructions
- Begin by mixing all dry ingredients in a bowl. Then add in wet ingredients -- but not the peaches. Layer the peaches on top once all ingredients have been mixed. Do not over mix. In a greased 8X8 casserole dish, bake uncovered at 350 for about 25 minutes. Let cool and serve. This can be store in or out of the refrigerator. You can also make a large batch, cut and freeze! I made these before watching your video. The recipe above doesn’t have the cinnamon. It still came out great. I will make it again, was it a teaspoon of cinnamon?
