Pork Tenderloin! This is one of my favorite high protein dishes! In my opinion, you can do just as much with this as you can with chicken and you can infuse a lot more flavor!
What is a Pork Tenderloin?
Pork tenderloin is a boneless piece of meat of tender meat. It is a lean and comes from theloin, which runs from the hip to the shoulder of the pig. Pork Chops are also cut from this area as well. You may also see this cut labeled as pork filet because its such a desirable cut of meat being high in taste and low in fat! This also makes is a favorite in the WW community and the Low Carb community as well!
In today’s recipe we are going to utilize the ever versatile pressure cooker. Ill link one I love right HERE. Now I’ll be honest. At first I was afraid to use a pressure cooker. I thought about my grandma’s version where the wheel would spin on top and hot steam would be brewing out of it like a steam engine. No thanks!
I recently discovered that the pressure cooker of old is nothing like today’s version with lots of safety features and amazing benefits — like cooking this tenderloin in 20 minutes to tender, juicy perfection!
Now, if you don’t have a pressure cooker you can of course do this same recipe in the oven or in a slow cooker.
In the over it will take about 40 minutes covered and in the slow cooker it will be 6-8 hrs.
Either way, the taste is amazing!
Mexican Pork tenderloin
Equipment
- Pressure Cooker (Ill link the one I like)
Ingredients
- 1 lbs Pork Tenderloin
- 1 packet Chili Seasoning of your choice
- 2 TBSP Minced garlic
- 1 capful apple cider vinegar
- 1 tsp salt and pepper
- 1/2 C water
- 2 C Chopped tri colored peppers
Instructions
- Place tenderloin in a freezer bag and put in all ingredients along with it. Thoroughly coat. If you can, marinade overnight. If not put all ingredients in your pressure cooker and set to 20 minutes. To finish I did a slow release. Opt: Serve with Jasmine rice or shred for tacos
