I was raised by my little Sicilian grandma. She was born in Sicily and then came to the US as a very young child when both of her parents died. She was raised in a convent by Nuns until she got married as a teenager. She and my grandpa, who also came over from Sicily as a young boy, were married for over 60 years! Gramz was an amazing cook and that who taught me to cook!
In a 1 bedroom apartment, she would create amazing meals for my grandpa and my brother and sister and I. Meatball Stew was a regular in the tiny kitchen! I can remember watching her make the meatballs and my grandpa would grind the fresh parmesan every week. This is a lightened up version of her Meatball stew recipe. I think my gramz would be proud!

Meatball Stew
Ingredients
- 2 lbs Lean Ground Beef
- 2 pieces Low calorie bread Dampened with water
- 1 packet Spaghetti seasoning
- 1/2 C Fat Free Feta cheese crumbles
- 2 whole eggs
- 5 peeled chopped carrots
- 3 whole Celery stalks chopped
- 1 whole onion chopped
- 1 14.5 can Tomato Sauce
- 1 14.5 Can Water
Instructions
- Meatball Stew
2 lbs lean ground beef2 pieces of Healthy Life or any low point bread dampened with water. 2 eggs½ C fat free feta1 packet spaghetti seasoning mixSalt and pepper
5 chopped carrots3 celery stalksOne chopped onion1 14.5 oz can tomato sauce 1 14.5 can of water
Mix first 6 ingredients together in a bowl but do not overmix. Just combine ingredients.Roll into meatballs. I got 38 meatballs out of 2 lbs. Brown them in a large pot and then add in on can of tomato sauce and one can of water. Let simmer.Meanwhile add in all remaining ingredients. Let simmer for about an hour. The points on this recipe include one potato.
