Thankfully, the more I learned about WW the more I realized I could turn my comfort food favorites into lower point dishes that I could enjoy! And I didnt have to sacrifice any of the flavor I craved!
This recipe will allow for 6 healthy sized portions that will absolutely satisfy your creamy masked potato needs! You’ll notice an odd ingredient in this recipe. I use Vanilla Unsweetened Almond Milk to add to not only the overall smooth texture of the dish but also that little hint of vanilla will have your taste buds saying “Hmmmm what is that?” in a good way! Everyone who tries these, and especially anyone who loves mashed potatoes but tries to limit them due to the butter and cream, falls in instant love with them!

Ingredients
- 3 Medium Russet Potatoes
- 1/4 C I cant Believe its Not Butter Light
- 1 C Unsweetened Almond Milk
Instructions
- Mashed Potatoes
3 Medium Russet Potatoes (Peeled and chopped) ¼ C I cant believe its not butter Light1 C Unsweetened Vanilla almond Milk
Boil potatoes until softStrain and place in mixing bowl Add in remaining ingredients along with salt and pepper
Mix until smooth and creamy!
