You’ve heard the famous WW 123 mug cake right? Thats pretty good I admit but I have to say .. this little cupcake in a Mason Jar is even better! Let me tell you why!
Well, for one thing we are using a Sugar Free cake mix that is very easy on the stomach. Lots of folks have issues with the Sugar Free store bought cake mixes because because they use a sweetener that is hard on the stomach. This version uses Swerve which is actually a sweetening agent called Erythritol. It is known to be much easier on the digestive tract than most other sugar substitutes. So there’s that but more importantly, unlike a mug cake, with this version you can actually put a cute lid on top and store these in the refrigerator! You could also store them on your counter as well!
WHY I love these?
The other thing I really love is that I don’t like to make 12-14 Sugar Free cupcakes that I am probably the only one eating. It makes me feel like I HAVE TO eat them in the next few days or they will go to waste. Since I’m the only one who eats Sugar free treats in my home, that happen, alot. So I don’t like to waste.
With these Cupcakes in a Mason Jar you can make just one in literally 60 second or make a few and store then — remember you have a lid!

Top with some WW friendly Rediwhip OR if you are looking to keep these low carb go for the full heavy cream whip! You can add nuts, sprinkles, fresh fruit or nothing at all!
The kids in my family go crazy for these because not only are they just the right size — they can walk away from them and come back to them as kids often do, right?!
Since each Cupcake in a Mason jar only uses a few tablespoons of cake mix, you can’t go wrong!

Cupcake in a Mason Jar

Ingredients
- 36 grams Swerve Cake mix 3 tbsps
- 2 tbsp egg whites
- 1 splash Almond Extract You will use strawberry for the shortcake version
- 2 tbsp I cant believe its not butter light or an oil of your choice but watch the points
Instructions
- Mix all ingredients in a Mason jar and Microwave for 45-60 seconds! Thats it! Top however you like!
