Chicken with Cilantro Lime Salsa
Equipment
- 1 Slow Cooker But you can do this whole dish in a skillet
Ingredients
- 3-4 Boneless, skin chicken breasts
- 1 tsp Both salt and pepper
- 1 tbsp Smokey Paprika
- 1 tbsp Dry chipotle seasoning
- 1 tsp olice oil
- 2 tbsp Both lemon and lime juice Fresh queezed or bottled is ffine
- 2 tbsp avocado OR 1/2 avocado
- 2 tbsp fresh cilantro
Instructions
- Preheat your crockpot and add your tsp of oil OR spray with Olive oil spray. Coat your chicken generously with all dry the seasonings. If you dont have the mexican seasoning mentioned you can always use 2-3 tbsps of Taco seasoning or one small pack. Cook for about an hour on high until cooked through. Remove from crockpot. Next in a bowl combine lemon and lime juice, pepper, a sprinkle of salt. Mash the avocado with the cilantro together unless you are using a tube of mashed avocado as shown in my video. Then combine those ingredients in one bowl. Last, toss the cooked chicken in the salsa and serve.
