Chicken Meatballs have quickly become my new go to! They are so full of flavor and versatility! I have been known to have mine in sauce with a little parm, next to scrambled eggs as a protein source, broken up in marinara and sitting on top of some Whole Wheat Pasta Noodles or even Spaghetti Squash!
They are ideal with literally any meal in the day and can even serve as a quick 3 point snack on any WW plan! For me, 2 meatballs is the perfect little afternoon lunch with a side salad.
But why stop there? How about a little meatball sub on a low point bun with a little Mozzarella or what about a meatball parmesan bake served with some Naan Bread to soak up the sauce?
Ok Im starting to get really hungry! Let’s get right to the recipe!
Remember the WW points on this will be greatly determined by how many chicken meatballs you make and how much they weigh. Also, be sure to get the fat free chicken! There are some higher point dark meat combinations out there so if yo want to keep the points low, read your labels, ALWAYS!
Watch it being made by video!
These are coming out to 3 WW smart points per 2 Chicken Meatballs on Blue and Purple. They would be a bit higher on Green since the Chicken is not zero points coming in at 4.
I like to serve mine in Raos’s Marinara with a little parmesan! Its an easy grab and dump sauce and doesnt need any doctoring to taste great!
Chicken Meatballs
Ingredients
- 1 lbs Lean Ground Chicken
- 1 egg
- 2 tbsp Garlic Powder
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp Any Marinara or tomato sauce
- 1 tsp Dry basil
Instructions
- Combine all ingredients together without overworking. Cook in a hot skillet with a drizzle of Olive oil until cooked through. I like to only flip them once so they get a little charred on the bottom. Wonderful flavor! Simmer in your favorite Marinara or serve by themselves. 3 WW smartpoints on Blue and Purple for 2 Chicken Meatballs4 on Green

So are there points because the chicken wasn’t just ground chicken breast? I can’t see where there would be points otherwise. They definitely would be a bit drier/tougher maybe with just breast meat. They look and sound delicious!
Yes thats correct!
Hi Barrett. Just a quick question. How did you calculate the points? I am relatively new on WW but just looking at the recipe I am unsure how the points were calculated. I love following you and making some of your recipes. I appreciate all the wonderful info you share with us.💕
I just put the recipe in the WW recipe builder. There is a little bit of dark meat/fat even in the lean ground chicken so that where the points come from. But it tastes better I think than grinding you own chicken breast. That makes it kind of dry.
Would chicken breast mince make these 0 points?
Yes unless you are on green since there is one egg in them.
Tried the meatballs tonight for dinner. Great flavor Barrett! My husband and I really enjoyed them. This recipe is a keeper. Will have again! Served with a salad.
Awesome! I love hearing that!
WAIT!! Where’s the cheese?? Meatball without grated cheese?? 🤔🤔
Grate yourself a little over the top!
😂 omg I had to laugh out loud. I said the same thing out loud😂
2 tbsp of grated pecorino on top is what i did. I used Lydia’s sauce 1/2 cup 2sp.
Sounds great but I’m wondering why no bread crumbs? Don’t you need them to hold the meatballs together?
Ive made this with and without breadcrumbs and honestly I cant tell the difference so I take them out to avoid the extra points. They are delicious either way and yes they hold together just fine. .
Thank you! I made them a few nights ago without the bread crumbs and they were delicious! Hubby and I both loved them! Will definitely make them again often!
One more question, would they be just as good with ground turkey?
Yes!! I had some ground turkey in my fridge and some ground chicken. (1/2 package of each) i mixed them together and it came out great. I would say if you have just ground turkey it would still be good
Thank you! I’ll definitely be making these next time with ground turkey!
How many meatballs does this make? Did I miss it somewhere?
I made 16 from one pound of ground chicken.
I got 12 small meatballs. They were really good.
