I could create different bowls everyday of the week and not get bored! Always WW point friendly and so versatile! I also love that the bowl is that vessel to eat them so you never have to add in lots of carbs -unless of course you want to in which case, go right ahead! As you know if you follow my Youtube Channel, I am certainly not anyone’s food police! This one is tops on my WW recipe list because it utilizes the best of Boneless, skinless chicken which can have a tendency to get boring. But this bowl is not the least bit boring and its bursting with huge fajita like flavors!
In this recipe, I season the chicken with an array of Mexican spices that most home cooks have readily available in their kitchens however, if you are in a hurry or don’t have all the spices you need, feel free to take a little help from the packets! Any taco seasoning packet will work. Just don’t add salt because you won’t need it if your using a store bought packet. Ive even been know to use a Chili Seasoning packet or even the Mojito Lime is wonderful in this type of Mexican flavored bowl.
You could also add in things like black beans, avocado, jalapenos, pico de gallo, southwest corn. These would all be very low WW points and big flavor boosters!
If you aren’t worried about carbs, and you certainly don’t have to be on WW, feel free to put this over a bowl of your favorite rice. Spanish rice, jasmine rice, cilantro and lime rice — all of the different variations will add to the flavor profile!

Chicken Fiesta Bowl
Ingredients
- 3 Boneless Skinless Chicken Breasts
- 2 tbsp garlic powder
- 1 tbsp Chili powder
- 1 tbsp Cumin
- 1/2 tbsp dry oregano
- 1/2 tsp salt
- 1 tsp pepper
- 1 Onion sliced
- 2 cups multi colored peppers
Instructions
- Combine all the dry seasonings together in a bowl. Dice up the 3 chicken breasts and toss them into all the seasonings coating them. Drop the seasoned chicken into a hot pan sprayed with some olive oil on your stove. Cook until there is no pink and browned. Set aside. Immediately drop in the onions and peppers. Add a splash of water to deglaze the pan. The good stuff is at the bottom! Brown the vegetables and then serve in your bowl with all the fixins you enjoy!
