If you love the idea of a tender roast bursting with flavor but everytime you make it, it comes out dry, flavorless and inedible you are going to love this very easy slow cooker WW recipe (Weight Watchers).
Coming in at 1-2 point per ounce (depending on the cut of meat) this one is perfect when you need to head out for the day and dont have time to babysit a roast. Ive never had this come out tough — not one time! The secret is in the seasoning and the slow cook!
Tips for a tender roast
ONE
If possible, have the meat at room temp. When I get up to grab my first coffee, I grab the meat from the refrigerator and let it come to room temp on the counter. That way the meat is less likely to seize up as its cooking.
TWO
Preheat your slow cooker on high. I never like to throw a chilled piece of meat into a cold vessel. This is the same theory as pre heating an oven or a skilled for a meal.
THREE
Keep the slow cooker lid on. I know its tempting but leave the lid closed for at least 4 hours before opening it. You want the heat to remain in the pot and everytime you open it you are letting that hard earned heat and steam right out of the top. So let it do its thing just stirring on occasion.

Serve the Roast over Cauliflower Rice, regular Jasmine rice or even with some potatoes and carrots. Sometimes if Im eating carbs for the week (I do Weight Watcher with a nod to low carb) Ill dip some crusty bread in the Au Jus. Dont let that go to waste!
The Au Jus is so great if you want to put this over bread and make a roast beef sandwich, restaurant style with a little dip on the side! We even throw this meat in a soft taco shell with some cheese and cilantro. Top with Sour cream and you are ready for dinner!
Slow Cooker Roast

- Slow Cooker
Ingredients
- 3-4 lb Roast
- 1 C Vegetable Stock
- 1 chopped Onion
- 2 tbsp Cowboy Seasoning
- ½ tsp onion powder
- 1 tbsp garlic powder
- ½ tsp salt
- 1 tbsp pepper
- 2 tbsp Minced garlic
- 2-3 Tri Colored Peppers
- 1 tbsp Paprika
- 1 tbsp Apple Cider Vinegar
Instructions
- Add all ingredients into the slow cooker and let cook for 6 hours on high or 8 hours on low.
