Amazing LOW CARB "Faux"tato Salad
I absolutely LOVE Potato Salad! LOVE IT! Seriously! The eggs, onions, the mustard and mayo! It just reminds me of a sunny day our BBQing with the family. Eating is so much about pleasure and good times for so many of us. I mean, we are all actually programmed to seek pleasure and avoid pain.Its really just a fact of life.
So, when we eat, we are seeking the pleasure of food, and you are avoiding the pain of hunger.
So I guess in a way, the love of food is just a natural instinct. This is part of the reason I sooooo enjoy creating low WW Smartpoint and Low Carb dishes that we can enjoy with family!
Does the Cauliflower REALLY taste like Potato?
The easy answer is YES and NO. So, if you are on a diet lifestyle journey and you are not in the habit of partaking in the high fat, high carb versions of food — well then you are going to say 100% YES! That is how I felt when I made this! If you cook the potatoes to the right texture (this is important! No one wants mashed Cauliflower salad!)
The cauliflower taste is actually very mild and overpowered by the eggs, bacon, and all the creamy spicy condiments we mixed together.
THE COOKING IS KEY!
BE sure to follow the cooking instructions of cooking to an AL Dente bite. If you overcook, it will be mashed cauliflower. IF you undercook it, it will be crunchy and UNPALATABLE.

Cauliflower Potato Salad
Equipment
- Stove top Pot or microwave
Ingredients
- 1 medium Head of Cauliflower
- 1/2 C Light Mayo
- 1 medium chopped onion
- 1 tsp Apple cider Vinegar
- 2 tbsp Dijon Mustard
- 2 tbsp Spicy brown OR Yellow Mustard
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Garlic Siracha Seasoning Optional
- ½ tsp salt and pepper
- 4-6 Slices Cooked Bacon
- 3 hard boiled Eggs
Instructions
- Start by hard boiling 3 eggs. Next Boil 1 head of Cauliflower to an Al Dente state. We dont want this Cauliflower falling apart. We want it tender but not TOO tender. Once done, rinse with cold water and let cool. Combine Condiments and spices in a bowl and mix well. Break the cauliflower apart by hand in potato chunk sizes. Then stir in the Bowl of your mixture. Add a little Paprika on top for color. Cover and let chill for 30 minutes and serve. This will also keep for 2-3 days.

This looks absolutely delicious! I will be giving it a try for this upcoming Memorial Day cookout! My only question is that in your instructions you list light Mayonnaise but ingredients appear to actually be light Miracle Whip. I think actual mayo would raise the points higher even if light. I will use Miracle Whip which is probably what you meant anyway. Thank you for posting these great recipes!

Per the recipe it makes 8-10 servings. You will get 8-10 depending on the size of the cauliflower. 8-10 will be about 3/4 C. Hope that helps!
